From this moment on, I implore you — don’t buy granola… MAKE YOUR OWN! Nothing could be simpler.  The oats are a springboard for your flavor creativity. If you like experiencing a flavor explosion, this recipe is a triple threat of sweet, spicy and savory!

The key requirement for homemade granola — the oats need be old fashioned rolled oats. Do not use the  the quick cooking type.  There are numerous recipes out there for homemade granola, but I’m quite partial to a recipe I came across in Food52 Genius Recipes as my base.

The savory is extra-virigin olive oil, which is definitely intriguing and fabulous. The spicy element comes from spiced pumpkin and sunflowe seeds; and the sweetness is the use of maple syrup and brown sugar as well as dried fruit.  All together, it’s a symphony of taste.  The idea of using olive oil initially made me pause. But, I found it provides a subtleness, while the other ingredients punctuate their flavors through the oats.

It doesn’t take that long to make granola, and I suggest you make varied batches or multiple batches of one flavor variety.  Some may have dried berries — strawberries, cranberries, and cherries; while some batches may have bits of chocolate chips and butterscotch chips.  This recipe not only features plump dried cranberries and bits of golden orange apricots, it also includes spicy salted sunflower seeds and habanero-spiced pumpkin seeds balanced with raw pecans.

Made in less than an hour, as the granola bakes, a warm, toasty aroma will spread across your kitchen, begging you to give it a nibble once it’s complete.   I can attest that while mixing everything, that’s when the nibbling begins!  When completed, I love it not only as a great snack, but also sprinkled in salads and of course on top of creamy, thick greek yogurt .
