
MAGIC EVERYTHING SAUCE
It is almost St. Patrick’s Day and do you believe in magic? Well, I may be overreaching by calling this a “magic everything sauce;” however, make this once, and you’ll be making time and time again. Not only delicious, it’s simple, fresh, herby and stunningly vibrant green!
A salad dressing, a dip, a sandwich spread… it’s everything. Oh, did I mention it’s also vegetaraian? This simple recipe comes from The James Beard Award Winning Cookbook Whole Food Cooking Every Day
Magic Everything Sauce
A dressing / sauce that you can use on just about anything and everything!
This recipe is from Amy Chaplin's Whole Food Cooking Every Day and makes 1½ cups.
Ingredients
- ½ cup Tahini
- ½ cup water
- 2 tbs Extra-Virgin OliveOil
- 2 tbs lemon juice, freshly squeezed
- 1 small garlic clove, grated
- ½ tsp salt, plus more for taste
- 2 cups fresh cilantro leaves
- 2 cups fresh parley leaves (I like Flat Leaf)
- ½ cup fresh mint leaves
- 1 Medjool date, pitted and chopped (optional)
Instructions
Into a VitaMix (food processor or blender) add the first six (6) ingredients and blitz. If too thick, you can thin with a bit of water.
Add the cilantro, parsley, mint and date (if using) and blitz again. Again, adjust consistency as desired. Salt to taste.
Use right away, then store in a glass jar in the fridge up to one week.
